I recently attended a media dinner (which I don’t do often) and came away impressed with their selection of moonshine (over 50 different brands, mainly from Georgia) and the flavor combinations of the burgers. The one thing that is painfully obvious from the moment a two patty behemoth, loaded with toppings, hits your plate is that it’s impossible to eat like a normal burger…unless you can unhinge your jaw. This is the Spicy Memphis Pork burger and while it’s damn tasty, it’s a little hard to eat. The only other issue I have is with the reversed bun, which while unique is not functional as it must be removed and inverted. READ MORE

My husband had more discussion with our server, Gabe, over the varieties of moonshine available than he ever did with a sommelier about wine. Stillhouse Celebrates National Cheeseburger Day with First 50 Guests to Receive a Free Cheeseburger a Month for a Year

ATLANTA, GEORGIA, September 16, 2013 – Stillhouse: Craft Burgers and Moonshine announces that the first 50 guests over 21 years of age to order a burger on Wednesday, September 18th starting at 5pm will receive a free burger a month for the next year in honor of National Cheeseburger Day. Guests can choose from Stillhouse’s craft burger choices that include premium varieties of grass fed beef, mustard and Memphis pork, Coca-Cola teriyaki moonshine marinated chicken, fried green tomato, fresh ground duck with house made confit, lump crab cakes, Apalachicola fried oysters and remarkable vegetarian options such as the black eyed pea burger. While the classic sandwich is usually featured with American cheese, Stillhouse offers a wide range of other options that include goat, blue, pimento, habanero cheddar, gouda, and jack & dill cheeses baked on a bun served upside down.

Andrews Entertainment District is set to add Stillhouse to its impressive hospitality destination at 56 East Andrews Drive in Buckhead on Friday, August 30th. Using all of the moonshines available in Georgia, Stillhouse derives its name from its in-house cocktail program where moonshine is employed as the base ingredient to create classic cocktails. The carefully crafted cocktail menu is complemented by the ultimate burger experience with locally sourced ingredients and inspired toppings.

Applying regionally sourced products, baking cheeses onto buns and using house made condiments make the burgers stand out. Craft burgers selections include premium varieties of grass fed beef, mustard and Memphis pork, Coca-Cola teriyaki moonshine marinated chicken, seared turkey, fresh ground duck with house made confit, lump crab cakes, Apalachicola fried oysters and remarkable vegetarian options such as the Black eyed pea burger. Additional menu items include small plates, salads and shared sides consisting of deviled eggs, moonshine mussels, fried oysters, collard greens, spicy macaroni & cheese, fried green tomatoes, peanut butter hummus and more. Guests can dine inside, on the terrace or takeaway until late Monday through Saturday from 5pm until 1:30am.

At Stillhouse, the moonshine cocktail program is served in a variety of ways to enjoy the distilled sensation. Using six charred oak barrels prominently featured on the back bar, the month aged spirits are second to none. Served straight or in a cocktail, the moonshine infusions combine regional ingredients such as Vidalia onions, Georgia peaches, watermelon, mint and more so flavors are balanced and shine. Guests may also choose to smoke their spirit or cocktail with fresh apple, cherry, pecan, and maple wood chips. Stimulating garnishes including local berries, freshly squeezed juices, bitters and house made syrups ensure smooth, flavorsome cocktails. Additional bar options include a small but carefully selected list that features beer staples and regional microbrews, top wine sellers and an American craft selection of liquors such as the award-winning Boyd & Blair Vodka.

“We love the history and flavor of moonshine. It took finding the right balance of ingredients to get an approachable but complex cocktail that pleases the palate,” said Andrews Entertainment District President Steve de Haan. “Furthermore, we felt moonshine paired nicely with our amazing regionally sourced burgers to create an upscale burger bar.”

As guests enter Stillhouse, they will notice the natural materials, black and white prints of stills, bootleggers, and moonshiners. Adjacent to the back bar are two lit chalk board menus and daily specials. The space is warmed up with custom made Edison pendant lights and includes booths and whiskey barrel tables with custom tops. The ceiling has antiqued copper drop tiles alluding to the stills used to create this storied spirit. Featuring natural stone floors, a large wooden beam back bar and hammered copper accents on the bar, Stillhouse allows Buckhead’s elite an evening out without the pretentiousness.

The Improv Opens by Bringing Top Comedians to Atlanta

The Improv Comedy Club & Dinner Theatre hosted a Media and Concierge Showing last Thursday evening at the 4000 square foot venue. Improv Founding Partner Budd Friedman was in town from Los Angeles to meet, greet and catch the hilarious show by comedian Owen Benjamin of TBS’ Sullivan and Sons. Atlanta’s up and comer Jamie Ward served as host for the evening and funnyman Gene Pompa garnered laughs on the Improv’s trademark brick walled stage.  Another highlight of the evening was a surprise closing act by famed comedian George Wallace. While enjoying the show, guests dined on cuisine from the kitchens of surrounding Andrews Entertainment District restaurants that included bistro plates from Cellar 56, pub fare from Stout Irish Sports Pub and scrumptious sushi from Czar Ice Bar. The evening was complete with upscale cocktails with favorites from Prohibition, East Andrews and Czar.

The Improv Comedy Club & Dinner Theatre opened in Atlanta on October 4th. Perhaps best known for its A&E network show An Evening at the Improv, the legendary comedy club was founded by Budd Friedman in New York in 1963.  Expanding in 1975, the renowned club debuted its second location on Melrose Avenue in Hollywood, California. For almost a half century, The Improv Comedy Clubs have remained the premiere stages for live comedy. Over the decades, the talent who has played center stage represents the Who’s Who of American comedy, including Richard Pryor, Billy Crystal, Lily Tomlin, Freddie Prinz, Andy Kaufman, Eddie Murphy, Jerry Seinfeld, Tim Allen, Jay Leno, Chris Rock, Dane Cook, Ellen DeGeneres, Jamie Foxx, Adam Sandler, Jeff Dunham, and Dave Chappelle.

15 Tips To Improve Your Food Photography

1. Turn off your flash

This is the cardinal rule that you will hear again and again in food photography tutorials. It doesn’t matter if you are using a point-and-shoot, SLR or smartphone, TURN THE FLASH OFF. Using a flash makes the subject look flat or washed out and creates unflattering shadows.

2. Use natural lighting
You’ll need a good light source. Shoot near a window or consider shooting on an outdoor table. If you have harsh sunlight beaming directly onto your subject, drape a thin cotton sheet across the window as a diffuser. The idea is to use soft, ambient light. Of course, there are artificial light sources that can be used if photographing during the day is not convenient for you. Lowell Ego lights work well. Watch out for standard kitchen lighting – overhead fluorescents can be harsh, or give a yellow cast to your photos.

3. Organize
Try to plan out the elements of your shoot long before you prepare your food. This includes de-cluttering your work space as well as the camera’s field of view (look through the viewfinder for distracting objects). In addition, pick out props and choose dishes for plating. Having the scene set will help you swiftly execute your shoot, which is important because food always photographs better when it is fresh. Pay special attention to dishes with creamy sauces like alfredo or items with melted cheeses like pizza or burgers, as they quickly start to break down and look less fresh and appetizing.

4. De-Blob and clean up
Give plates and cutlery a wipe before shooting. A blob of food in the wrong spot or fingermarks on a wine glass may not be totally noticeable when you’re setting things up, but could become glaringly annoying once you view the pic on your screen.

5. Use a tripod
That food isn’t moving, so there’s NO EXCUSE for blurry food photos. Stabilize your camera for clear, usable photos every time.

6. Take lots of photos
Taking pictures from various angles will increase the chances for photos with “wow” factor. Just by shifting the camera’s perspective slightly, a frame can go from boring to spectacular. So move around your subject and play with camera angles. Save up for a large, fast memory card for your camera. It’s worth the extra few dollars, as it will give you the freedom to shoot as much as you like in a single session and capture the food quickly, while it’s at its best. Taking “mise en place” photos, some work-in-progress shots or some special ingredient photos to help tell a recipe’s story. Part of the magic of cooking is using simple elements like butter, flour and spices to create something delicious.

7. Try and capture the YUM factor
Think about what makes your subject really delicious and then aim to highlight this characteristic in your shot. This is especially important because your food photos will act as advertisements when you post them on Facebook or your website. The yummier they look, the more likely your customers will be to share them with their friends and give you the free publicity you crave!

8. Shoot from a lower angle than you think you should
Some may argue that food is usually seen from a 45% angle looking down, so why photograph food from a different angle? The truth is that photographing food from a fork’s-eye view is different, and in the world of photography, different means unusual and unusual means interesting. From a lower angle, the food’s thickness and height become much more apparent than if the shot was taken from a high angle or from above. Often, the “directly above” angle is the most boring angle. If you can’t see the sides of an object, you have no idea if the thing has any height or not. So if you shoot a 3” thick steak from directly above, it might as well be 1/4“ thick. Shoot close and from a low angle.

9. Always be on the lookout for ideas
To get inspired, browse through food magazines on the newsstand or on your tablet computer. Take note of the angles the professionals shoot from and what makes the food look best. Online food blogs are another great way to quickly browse many food photos and pick up some new visual techniques. Here are some of the best food blogs of 2012: http://bit.ly/ONPirD

10. Use depth of field
Using a low aperture setting can blur the background and soften other elements while emphasizing the dish you’re shooting. If you’re taking photos with a smartphone, you cannot control depth of field with the default camera app, but several apps make it easy to do that after you get the shot. On an iPhone, try SnapSeed or TiltShiftGenerator.

11. Use color to create dynamic compositions
Plating and presentation are a big part of culinary artistry. Make sure your plate presentations POP with contrasting colors.

12. Find a photo editing program you like
On your laptop or home computer, use Apple’s iPhoto or Adobe’s Photoshop Elements to adjust color saturation, increase clarity and make exposure adjustments.

13. Shooting food with a phone? Use filters sparingly
Popular apps like Instagram, Hipstamatic or Pixlr-o-matic apply vintage or grungy filters to your photos, but food doesn’t look great in a sepia-tone, or in the style of a 70s polaroid, unless you’re trying to recreate your grandmother’s old cookbook. Food also looks bad in black and white. Try straightforward shooting with good, natural lighting to make your food look its best.

14. Learn More
